How it is made

Kombucha is tea, sugar and a living culture, left alone for as long as it takes. The sugar feeds the ferment rather than the finished drink, and nothing is heated at the end, so the culture is still alive in the bottle you open. What follows is every step of that, and what it does and does not leave behind.

  • Australian tea

Every batch begins with organically grown tea from New South Wales, brewed strong to give the ferment a clean, bright foundation.

  • Time, not shortcuts

Natural fermentation runs for as long as the batch needs. Complexity comes from time and living cultures, which no shortcut reproduces.

  • Ingredients that complement

Fruits and botanicals are chosen to complement the tea rather than overpower it, and to avoid masking the ferment with sweetness.

  • Unpasteurised

Heat would end the fermentation, so we skip it. The culture stays live and the cold chain runs from our door to yours.
